Savor Hamo Shabu to your heart's content
In Kyoto, hamo shabu (pike conger eel), which is popular from summer to fall, is offered. A course featuring puffer fish, the king of winter delicacies, is also popular.
Photo: Hamo Shabu Kaiseki, 9,680 yen (12,100 yen with grilled hamo & hamo sushi). Fresh hamo is briefly dipped in bonito broth and served with a special ponzu sauce. As autumn deepens, the fish becomes richer in flavor. Available from June to late October.
