Putting life into making soup Soul Ramen
The restaurant uses only local ingredients and offers a well-balanced bowl of soup, noodles, and ingredients. The signature item, Tonkoku Ramen, is made with chicken broth that has been simmered for six hours. The medium-thin noodles made with water from Fushimi, Kyoto, and Kyoto-brand "Bihada buta" pork chashu (pork cutlet) intertwine well with each other, resulting in an outstandingly satisfying experience.
The photo shows the famous Tonkoku Ramen (900 yen). The rich broth that makes you want to drink it all up is the charm of this royal ramen. It is served with plenty of kujo-negi (green onions) as an optional garnish.
The generous amount of kujo-negi (green onions) and kimchi (kimchi in a pot), served separately, are also a nice touch.
