The second branch of a long-established restaurant of tripe pot dishes that has been in business for about 70 years. Carefully prepared fresh domestic beef giblets are cooked in a secret soy sauce-flavored broth to condense the umami. You can choose soup from three types – traditional soy sauce flavor, miso and Hakata Japanese dashi, which is limited to the Hakata branch. There is also a selection of à-la-carte dishes such as basashi, or horse sashimi, and Hakata specialty bite-sized dumplings.
